1 teaspoon fennel seeds
1 teaspoon cumin seeds
1 teaspoon coriander seeds
2 large cucumbers -- chopped, including skin and seeds
2 pounds ripe tomatoes -- chopped, including skin and seeds
1 red onion -- chopped roughly
2 long green chilies -- seeded and chopped
sea salt and black pepper -- to taste
3 fluid ounces red wine vinegar
1/2 clove garlic -- grated
zest of 1 lemon
To serve: -- fresh parsley and mint
Heat the whole spices in a small non-stick skillet (frying pan) for a few
minutes until they are fragrant. Transfer to a mortar and pestle and grind
up to a powder.
In a bowl, place chopped cucumber, diced tomato, red onion, and chili; mix
through roasted ground spices and a little salt. Add red wine vinegar and
cover with film. Refrigerate for at least 3 hours, preferably overnight.
Using a blender, process until smooth. Add a little grated garlic and
season with salt and pepper to taste. Serve soup chilled with a squeeze of
lemon juice and chopped fresh herbs.
Serves 4 to 6
