  Caramelized Balsamico Dressing

    2        tablespoons  honey
    1                cup  balsamic vinegar
       1/2           cup  water
       1/4           cup  extra-virgin olive oil
    1              pinch  salt and freshly ground black pepper
  
  Mix honey, balsamic vinegar and water together in a small saucepan and
  bring to a simmer. Reduce by half and allow to cool.
  
  Whisk in oil and season with salt and pepper. Pour into a screw-top jar
  and refrigerate for up to one week. Shake dressing just before using.
  
  Serves 6
