  Funky Mezze Platter White Bean Dip

    2               cups  cooked white beans
    1              clove  garlic -- chopped
    1                     bay leaf
    2        tablespoons  lemon juice
    4       fluid ounces  broth -- or stock
    3 1/2         ounces  feta cheese -- crumbled
                          salt
  
  Heat beans with garlic, bay leaf, lemon juice and stock in a saucepan for
  10 minutes, until soft. Strain and discard liquid. Cool a little before
  processing until completely smooth.
  
  Add feta and salt, and process until smooth.
  
  Taste and add a little more salt or lemon juice if required. Refrigerate
  until ready to serve.
  
  Serves 6, as part of a mezze plate
