I am type 2 diabetic too and I try to be careful about sugars and carbs.
I love homemade tomato soup. I prepare the soup in advance, and finish
it the day I want to prepare it for my frequent long distance car trips.
I heat the soup, and while that is happening, I preheat a glass lined
thermos (do not use an aluminum lined thermos or cup). I preheat the
thermos by filling it with near boiling water and pour out the water
just before pouring the soup into the thermos. I take the heated soup,
strain it to remove large lumps and then pour it into the preheated
thermos. The soup stays hot much longer this way, as the thermos does
not absorb heat from the soup. It is easily consumed from a cup, while
driving or at a rest stop.

Secondly, I love egg sandwiches... I take two eggs, remove one yolk and
fry the eggs in a nonstick pan. Usually I have stirred the egg mixture
in a cup, adding diced garlic and onions. While frying the eggs, fold
over four sides of the cooking eggs toward the center and push the edge
down with slight pressure, then you have a square egg filler for the
sandwich. Turn the egg to your own taste, then place on high fiber bread
with a small amount of light mayo or mustard. Sometimes, I add a tomato
slices or lettuce to add more bulk. Cut the sandwich in half, slide it
into a baggy and put into the small cooler in the vehicle. I prefer it
hot, but cold is not bad either. The protein in the eggs keeps me from
getting hungry half way through the morning or afternoon.

Amen to the bag of nuts for snacks, or celery sticks filled with peanut
butter are also very tasty...

My Husband is also Type 2.

Buy the chips in the big bag of individual little bags. Those are approx. a
carb choice each. Look in the store and buy things already in little bags
so you are not tempted to just keep eating. But make sure to check the
carbs for each bag.

Salad with a lowfat dressing. Just go easy on the dressing. normally 2
tablespoons. A baked chicken breast - no skin. And a small apple or small
banana makes a very nice lunch within the carb range.

Buy high fiber bread (there is one that is on all the grocery shelves that
is called High Fiber and costs the same as all the other ones) and make a
chicken sandwich. Go easy on the mayo adding mustard for extra moisture. A
little bag of chips and a small apple.

In the store you can buy already cut up veggies for a snack. My Husband
likes to dip them in mustard. Low carb and doesn't need refrigerated and
ready to go!

Get on the internet and check out the fast food menus. They list carbs,
etc. For a change you could do that. Just have in mind what you are going
to order when you go in and stick to it. Don't even look at the list of
choices!

I drive a truck about 9-10 hours a day, and I am Type II diabetic.
Does anyone have ideas for something quick and easy to prepare, and
portable, i.e. lunchbox-type sandwiches, wraps, etc. that I can consume
while driving, or making a quick stop? Wheat-bread peanut butter and
sugar-free jelly sandwiches are getting old...

Please let me explain the situation with a truck driver as I used to be
one. Eating anything that dips or slurps (as in soup) is impossible to eat
while driving. Truck drivers don't have the luxury of refrigeration for
lettuce, or heat for that matter. One is pretty much stuck with what one
can put between 2 pieces of bread or handle like a banana.

Come on people, this is a recipe site. He said he's tired of p and j's.
We can help him out. I'd like to have some new ideas myself!

Hard boiled eggs, cups of mixed mayo/mustard/dash
of vinegar to dip in, crudites of every sort,
again, you have dipping for them, cheese sticks
wrapped in a thin slice of sandwich meat, choose
best available for low carb, dip in your dipping
sauce if you want. Good luck!

Pat,
I have the same problem with the husband. He has been driving for 40 years
and is now diabetic. The bread is a killer. Soup does not work since he
usually eats while driving. The lettuce wrap works but not every day. I
appreciate all suggestions too.

I'm also a truck driver with diabetes, I joined this group to help myself
out when i have down time and at home, I've saved all the recipes that have
been posted since I've joined, ild love to cook sometime and enjoy them, I
was just taken out of the truck by my doctor and d,o,t, as my sugar had been
running over 600 on the meter on a day to day and nothing could make it come
down, triglycerides had shot to 8518 before i got shut down, three weeks off
the road and a lot of thought as to what i eat and stress being out on the
road makes a difference, hopefully the question the guy asked about proper
food to eat will help all of us, my first time posting so I'm hoping I
didn't say anything wrong.
