[Healthy_Recipes_For_Diabetic_Friends] Re: Lunch for truck drivers

Instead of snacking all day - I find that the best approached to maintaining an even blood sugar level is to eat a well balanced with the carbs controlled - breakfast, midmorning snack, lunch, mid afternoon snack and then dinner. For us it is 6 AM, 9AM, Noon, 2 PM and 4:30 or 5 PM.

We also keep an on going log of what we ate. That way you will learn what foods seem to effect your blood levels good or bad. Everyone's body reacts differently to different foods. For example, rice takes us way off the chart too high, where as with some people rice does not effect them that drastically.

Apples are the best choice for fruits. They help keep you on an even keel. Be careful with the plums, citrus such as nectarines and oranges, grapes, etc. because they are very high is sugar. They are good if you have a serious or potentially life threatening low blood sugar level, however, as an everyday choice for your fruit they are too high in sugar. They are a fast sugar and do not do a good job of maintaining the consistent glucose level that you want to obtain. So you get that fast sugar high and then that fast sugar drop. Not good for a diabetic.

Through your doctor you can get a referral to classes on living with and maintaining your health as a Diabetic. You will learn all about how Carbs and Fiber counts work together. Salt and fats are also very important to watch. Through these classes you will get handouts with charts on the Carb counts of food so that you can plan meals that are within a good range for you.

For example, you will start buying the smaller apples because then you can have a whole apple and then some other item for your snack rather than just one big giant apple and that is all.

That is what we did and it sure helps you feel more in control. It helps you be more prepared to make good choices throughout the day.

A lot of people do not grasp what eating Diabetic is all about and you can get poor information and steered in the wrong direction very easily so it is best to go to classes and also talk with a Dietician so you can decide what is best for you.

Education is the key.
