My Husband is also Type 2.
 
 Buy the chips in the big bag of individual little bags.  Those are approx. a
 carb choice each.  Look in the store and buy things already in little bags
 so you are not tempted to just keep eating.  But make sure to check the
 carbs for each bag.
 
 Salad with a lowfat dressing.  Just go easy on the dressing. normally 2
 tablespoons.  A baked chicken breast - no skin.  And a small apple or small
 banana makes a very nice lunch within the carb range.
 
 Buy high fiber bread (there is one that is on all the grocery shelves that
 is called High Fiber and costs the same as all the other ones) and make a
 chicken sandwich.  Go easy on the mayo adding mustard for extra moisture.  A
 little bag of chips and a small apple.
 
 In the store you can buy already cut up veggies for a snack.  My Husband
 likes to dip them in mustard.  Low carb and doesn't need refrigerated and
 ready to go!
 
 Get on the internet and check out the fast food menus.  They list carbs,
 etc.  For a change you could do that.  Just have in mind what you are going
 to order when you go in and stick to it.  Don't even look at the list of
 choices!

 I drive a truck about 9-10 hours a day, and I am Type II diabetic.
 Does anyone have ideas for something quick and easy to prepare, and
 portable, i.e. lunchbox-type sandwiches, wraps, etc. that I can consume
 while driving, or making a quick stop? Wheat-bread peanut butter and
 sugar-free jelly sandwiches are getting old...
