 Almond Blue Cheese Spread

 Amount  Measure       Ingredient -- Preparation Method

   8             ounces  light cream cheese -- softened
      3/4           cup  sliced green onions
      1/2           cup  part skim ricotta cheese
      1/2           cup  crumbled blue cheese
      1/2           cup  chopped toasted almonds
   3        tablespoons  chopped parsley
   1              clove  garlic -- pressed through garlic press
      1/4      teaspoon  black pepper
                         To serve: -- Crackers
 
 Mix together all ingredients, except crackers, until well blended. Serve with an assortment of crackers.
 
 Serves 16
 
 A three cheese spread/dip which may be served with crackers to make a great snack or appetizer
