Mashed Sweet Potatoes with Chipotle - 14.3g Carbs, 2.5g Fiber, 4.6g Sugar

A good thanksgiving side
I hate the sugary sweet marshmallowy sweet potatoes that are
often served at Thanksgiving Feasts. This is what I serve. We
love it. It's from my best friend Colleen and her son has
always hated any orange veg but this one he does like. Terry

3 Sweet Potato, unpeeled
1 Tbsp Butter
1 juice Lime Juice
2 canned Chipotle chiles in adobo, chopped
1/4 tsp Cumin, ground
Salt and pepper
1 Tbsp Cilantro, finely chopped

Preheat oven to 400 degrees.

Prick the sweet potatoes in several spots, and then place them on a foil-lined baking sheet. Bake for about 40 minutes or until tender. Remove from the oven and let cool a minute or two. While still warm, carefully peel off the skins and discard.

Put potatoes in a large bowl; add butter and lime juice. Mash with a potato masher or a fork until the butter and lime juice are thoroughly mixed in and the potatoes are smooth.

Gently stir in chipotles (start with one; they pack quite a wallop) and cumin. Taste and add more chipotle if desired. Add salt and pepper to taste. Reheat briefly in a microwave if necessary. Sprinkle chopped cilantro on top to serve.

Great grilled partners: Spice-rubbed pork tenderloin, marinated pork kebabs, spicy jerk chicken, barbecued ribs, garlicky shrimp, corn on the cob.
