White Bean And Bacon Soup - 36g Carbs, 12g  Fiber, 4g Sugar

Servings: 10 persons

3 whole Roma tomatoes, chopped  
1 lb bacon, thick-cut, cut into 1" pieces  
2 whole bay leaves  
4 cups chicken stock, low sodium  
2 Tbsp tomato paste  
1 whole onion, diced  
2 whole carrots, large, peeled & diced  
1 lb great northern white beans  
2 celery stalks, diced  
4 garlic cloves, minced  
Pepper
Salt, to taste  
Parsley, fresh & minced to taste

Rinse the beans well & then put them in a large bowl. Cover them with water approximately 2" and let soak for overnight.

Drain the beans & place them in a large size pot. Add in 4 cups of water & the chicken stock. Heat over moderate heat & bring everything together to a boil; once boiling, decrease the heat and let simmer.

While you are cooking the beans, cook the bacon over medium heat in a large skillet for couple of minutes, until just barely crisp. Remove them to a plate lined with a paper towel. Add 2/3 of the cooked bacon to the beans; reserve the remaining for garnish.

Drain the bacon grease from pan & add in the celery, onions, and carrots. Season them with some pepper & salt; cook for couple of minutes, until just starting to soften. Add in the tomato paste and garlic; cook for a minute or two. Add vegetables to the beans followed by the bay leaf; give everything a good stir. Cover & cook for 1 & ½ hours, until the beans are tender, on low (to medium-low) heat. If the liquid level gets too low, feel free to add a cup of more broth.  

Taste & add more pepper and salt, if required. Stir in the tomatoes. Serve with chopped parsley & chopped reserved bacon.
