Good for brunch with a couple cherry tomatoes and avocado slices.
1 head cauliflower, cut into florets
½ cup cream cheese
¼ cup whipping cream
2 Tbsp lard (or butter, if you prefer)
1 Tbsp lard (or butter, if you prefer) to grease the crock-pot
1 tsp salt
½ tsp fresh ground black pepper
½ cup Cheddar, shredded
6 slices bacon, crisped and crumbled
Grease the crock-pot.
Add all the ingredients, except the cheese and the bacon.
Cook on low for 3 hours.
Open the lid and add cheese. Re-cover, cook for an additional hour.
Top with the bacon and serve.
