Turkish Yogurt and Cayenne Dip - Acili Esme

1 teaspoon salt
4 large garlic cloves -- peeled
3/4 cup full-fat plain yogurt -- or labna (strained yogurt, quark, or yogurt cheese)
6 tablespoons greek-style yogurt, whole milk
1/2 teaspoon cayenne pepper
1 teaspoon chopped fresh dill
To drizzle: -- extra-virgin olive oil
To garnish: -- whole scallions
To serve: -- French bread
In a mortar, pound the salt and garlic together until mushy.
In a small bowl, blend the mushy garlic with the yogurt, labna, cayenne,
and dill. Drizzle with a small amount of olive oil and serve with
scallions and good French bread.
Makes 4 servings
AuthorNote: This preparation is a simple blend made with yogurt and
garlic, a spiced up cacik. You can eat it with pieces of bread and
scallions, but I also love to dip kofte (bean balls or felafel).
