Rotisserie Seasoned Chicken, Quinoa and Tomato Salad

Serves 5
Serving size:  approximately 1 1/3 cups

Ingredients:

1 c. dry quinoa (rinsed)
2 c. water
1 c. red cherry tomatoes (halved)
1/2 c. chopped parsley (or to taste)
1/3 c. chives (chopped, adjust amount to taste)
10 oz. rotisserie seasoned chicken breast (diced small)
2 T. extra virgin olive oil
2 T. lime juice
2 T. white wine vinegar 
1/4 t. salt
1 garlic clove (chopped)
1/8 t. ground black pepper (to taste)

Combine the quinoa with the water in a saucepan.  Bring to a boil.  Cover,
reduce heat and simmer 10 minutes or until the liquid is absorbed.  Or cook
according to package directions.  Remove from the heat.  Let stand 10 minutes. 
Fluff with a fork.  Combine the quinoa, tomatoes, herbs and chicken.  Combine
the oil, lime juice, vinegar, salt and garlic.  Drizzle over the salad.  Add
pepper to taste.  Mix well.  Chill.  Serve cold.
