Shrimp Shiitake Pot Stickers

1 egg
1 bunch scallions -- minced
4 fresh shiitake mushrooms -- minced
2 heads baby bok choy -- finely chopped
1 pound raw shrimp -- deveined and minced
2 tablespoons sesame oil
2 tablespoons soy sauce
2 tablespoons grated fresh ginger
1 1/2 tablespoons grated garlic
1 1/2 tablespoons cornstarch
1 teaspoon finely ground fresh black pepper
50 round dumpling wrappers -- gyoza
5 cups water

In a large bowl, combine the egg, scallions, mushrooms, bok choy, shrimp,
sesame oil, soy sauce, ginger, garlic, cornstarch, and pepper to form a
uniform mixture.

Place a dumpling wrapper on a plate or clean, dry surface. Place a
teaspoon of filling in the center of the dumpling wrapper. Fold the
wrapper in half to form a half-moon shape, pinching the wrapper tightly
together . Press the 'fold' side gently down on the plate so it can stand
alone, seam side up. Repeat until all of the filling and wrappers are
gone.

Heat a small amount of canola oil in a large saucepan over medium heat.
Place about 10 pot stickers flat side down and fry until the bottom is
browned. Add 1 cup of water, cover immediately. Allow dumplings to steam
for about 5 to 10 minutes.

Once the dumplings are fully cooked the water will have fully evaporated
and the bottoms will be crisp. Repeat for remaining dumplings.

Makes 25 dumplings
