Bulgur Wheat with Mushrooms Ham and Peppers

2 tablespoons olive oil
1 onion -- diced
4 garlic cloves -- minced
2 Portobello mushroom caps -- diced
1 cup cubed smoked ham
1 poblano pepper -- diced
1 cup bulgur wheat
1 cup stock -- ham or chicken
1/4 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Heat the oil in a large skillet over medium heat. Saute the onion, garlic,
mushrooms, ham and peppers until the onions caramelize, about 20 to 40
minutes.

Meanwhile, bring the bulgur wheat and stock to a boil in a small saucepan.
Reduce the heat and simmer for 15 mintues or until tender.

Stir the mushroom mixture and spices into the bulgur wheat. Serve
immediately.

Serves 4

ChupaNote: I used smoked turkey drumstick meat in this; add a handful of
mixed minced parsley and mint with the mushrooms at the end.
