Cauliflower Salad with Green Onion Dressing - 22.5g Carbs, 5.7g Fiber, 8.5g Sugar

1 head cauliflower, cut into florets
1 small yellow zucchini, halved lengthwise & thinly sliced
1 large red, yellow or green sweet pepper, cut into bite-size strips
1 cup radishes, sliced
1 cup fresh or frozen peas
--> GREEN ONION DRESSING
1/2 cup green onions, coarsely chopped
1/4 cup mayonnaise, low fat
1 Tbsp Dijon mustard
1/4 tsp pepper
1 clove garlic, halved
1 cup plain non fat Greek yogurt
Pour boiling water over cauliflower and let stand 10 minutes. Rinse with cold water and drain well. Combine cauliflower, zucchini, sweet pepper strips, radishes and peas in a large bowl. Pour Green Onion Dressing over vegetables. Toss lightly to coat. Cover and chill for 4 to 12 hours.
--> GREEN ONION DRESSING
Combine green onions, mayonnaise, Dijon mustard, pepper and garlic in a blender or food processor. Cover and blend or process until onion is finely chopped. Transfer the dressing to a small bowl. Stir in yogurt. Cover and store in the refrigerator for up to 1 week.
