4 garlic cloves -- minced
1/4 teaspoon hot red pepper flakes
1/2 teaspoon smoked paprika -- to 1 teaspoon
To saute: -- oil or butter
For a basic saute that serves 4 to 6, use 4 minced garlic cloves, 1/4 teaspoon hot red pepper flakes, and 1/2 to 1 teaspoon smoked paprika. Briefly saute in oil or butter. If chile heat isn't your thing, skip the red pepper flakes and use the sweet smoked variety of Spanish paprika, which has less heat.
ChupaNote: If you're not sauting immediately, strain & store in fridge.
Make enough to saute veggies for 4 to 6.
AuthorNote: Bacon is the one thing most vegetarians fall off the wagon for, and deservedly so. While true duplication is impossible to get without the animal element, we've come up wiht a decent stunt double - garlic plus hot red pepper flakes plus Spanish smoky paprika (sweet or hot). A Spanish labe for the paprika would read Pimenton de la Vera. Adding this trio to the beginning saute of the dish lends a smoky and meaty air to the pot.
