Brussels Sprouts and Split Pea Soup - 41.9g Carbs, 16.3g Fiber, 7.1g Sugar

Perfect family comfort food for chilly nights
Serves: 8

2 cups rinsed split Peas
8 cups chicken broth
1 cup cooked ham, diced
1 fresh Fennel bulb, diced
4 cups chopped Brussels Sprouts (raw)
1 large Yellow Onion (diced)
2 tsp salt
1 cup of celery, diced
1 cup carrots, diced
2 Tbsp garlic salt
2 Tbsp salt free garlic & herb seasoning
1 Tbsp herb de provence
2 Tbsp olive oil
1/2 tsp liquid smoke

In large soup pot over medium-high heat add olive oil to pot and add;
Fennel, Brussels Sprouts, Onion, Celery, Carrots and seasonings. Cook
vegetables until soft and tender.

Add chicken broth, split Peas, liquid smoke and ham to pot. Bring to
a boil and reduce heat to a simmer and cook until split peas are soft,
about 1 hour.

Serve steaming hot.
