Red Cabbage Chutney with Bacon

1 small red cabbage
1/2 pound streaky bacon -- rinded and chopped
2 ounces butter
2 large dessert apples
salt and pepper -- to taste
2 tablespoons brown sugar
2 tablespoons vinegar -- preferably red wine

Slice cabbage finely, removing core and outside leaves.
Fry bacon until crisp in a little of the butter and remove to a warm plate
Add rest of butter to pan (reserving 1/2 oz) and cook onions gently until pale gold.
Core and slice apples.
In a strong saucepan place layers of cabbage, apple, onion and bacon, seasoning each layer and adding little vinegar and sugar.
Pour over 1 teacup of water and finish with layer of sugar and remaining butter.
Cover and gently simmer for about 45 minutes, longer if desired.

Serves 4 to 6, as a side

AuthorNote: I usually cook this in the slow cooker and it melts with cold meats. This is the best red cabbage recipe I have found, it comes from one of my very old Hamlyn cookery books.
