Red Pepper Cheese Dip - 3g Carbs, 1g Fiber

From: Fix-It and Forget-It Diabetic Cookbook
Servings: 12 - 15

2 Tsp olive oil
4 large red peppers, cut into 1" squares
4 oz feta cheese

Pour oil into slow cooker. Stir in peppers.
   
Cover. Cook on LOW 2 hours.
   
Serve with feta cheese on crackers.
