Pork Zucchini Tomato and Corn Stew - 5g Carbs, 1g Fiber, 1g Sugar

Serves:  8

1/2 cups cooked corn (optional)
1 cup chopped onions
1 1/2 cups sliced zucchini
1 cup chopped tomato
2 Tbsp coconut oil
2 Tbsp chopped garlic
2 tsp salt
1 tsp ground pepper
4 lb cubed pork  

Put ingredients in the slow cooker. Cover, and cook on low for 7 to 9 hours.

Does not include added salt!
