Popeye's Dirty Rice - Vegetarian version

1 pound spicy bulk breakfast sausage -- (I like the Morningstar Farms soy patties, but whatever use the spicy version)
14 ounces chik'n broth -- clear, low-sodium & low-fat
1/2 cup long-grain rice
1 teaspoon dry minced onion

Brown the sausage in a skillet for 6 to 8 minutes until the pink color
disappears, crumbling with a fork.

Stir in the broth, rice, and onion.

Simmer gently, covered, for 18-20 minutes, or until the rice is tender and
most of the broth is absorbed.

Serves 4
