Green Olive Walnut Spread - Mediterranean

1 cup pitted green olives -- (with or without pimento), chopped
1/2 cup fresh parsley -- chopped
1 cup chopped walnuts
1/2 cup green onions -- chopped
1/3 cup vegetable oil
2 Tablespoons lemon juice
1/2 teaspoon crushed red pepper
salt
fresh ground pepper -- to taste
Combine all ingredients except the salt and pepper in a food processor.
Process JUST until the spread holds together and be careful not to puree!
Season with salt and pepper to taste. Cover and refrigerate until serving.
Serve with matzoh or on lettuce as a salad.
Serves 8
This can be made a day ahead and stays in the refrigerator for a few days,
or it freezes beautifully.
