Combine mustard seed, coriander seed, fennel seed, cardamom seed, nutmeg, and 3 or 4 whole cloves.

This recipe goes with Red Pepper Relish with Aromatics

Makes 1 1/2 tablespoons (about 4 one-teaspoon servings)
