Marinated Grilled Chicken - 2.6g Carbs, 0.3g Fiber, 1.4g Sugar

Citrus and garlic glazed grilled chicken.

Cook Time: 12 min

2 whole chicken, raw, cut into 6 pieces (2 1/2 lb each)
6 medium garlic cloves, mashed
1 tsp salt and pepper
1 tsp paprika
1 small onions, cut in half and very thinly sliced
1/2 cup orange juice
1 tsp grated orange peel
1/3 cup chopped parsley
3 Tbsp olive oil

1. Trim any visible fat from the chicken; remove and discard the skin.
Rinse the chicken and pat dry with paper towels.

2. Place the chicken pieces in a nonreactive baking pan, sprinkle with
the garlic, and toss to coat.

3. Season the chicken with salt, pepper, and a generous sprinkling of
paprika.

4. Top with the onions.

5. Drizzle the orange juice over the chicken and sprinkle on the zest.
Sprinkle on the parsley and toss again. Drizzle with olive oil and again
toss to coat the chicken.

6. Cover and refrigerate the chicken overnight or for up to 24 hours.

7. Light a grill or preheat the broiler. Grill or broil the chicken for
about 12 minutes per side, turning once, until the juices of the chicken
run clear.

8. Serve the chicken hot off the grill or grill ahead and serve the
chicken chilled.
