If you cook rabbit in a pressure cooker it is nice and tender and only takes about 20 minutes for a whole rabbit. The pressure cooker infuses the flavors too.

Since rabbit is tough, it's best if you first brown bite size chunks of rabbit, with onions and a dash of salt in olive or oil of your choosing.  Then add enough water to the pot (or crock pot works great too).  Now stew your rabbit and onions until tender.  

Finally, add the rest of your ingredients as called for in your recipe.
