  Rabbit is higher in protein, lower in fat, and the fat is not marbled thru   the meat so really lean. They are little vegans so more of a "clean" meat if     raised in the US. 
   
  Unfortunately most rabbit meat sold in the US is raised in China where they   don't have any clean water or very good feeding methods for anything there. Try   to buy local and you're LUCKY if you have a state where farm markets allow   farmers to include meat and other items.
   
  Rabbits are much easier on the environment if that is of interest to   anyone. (The manure is the best of all species for gardening. Either compost it   or apply it in the Fall and let it winter so it can break down before growing   new veggies. Said to encourage diabetics to garden so we have an even more   healthy diabetic diet.)
   
  Rabbit is VERY HEALTHY (as is goat)! So it's also better for a   heart-healthy and low cholesterol diet. I don't know if it's better for a kidney   diet. (A lot of diabetics also deal with those issues too.)
