Serves: 4
15 oz hearts of palm (1/2 of 25 oz jar), drained and cut into slices
2 small organic avocados, diced
2 Tbsp fresh squeezed organic lime juice
1 cup small grape tomatoes, cut in 1/2
1/ 4 cup thinly sliced green organic onion (you can also use cilantro)
1/ 2 cup chopped cilantro (if desired)
Mediterranean sea salt, to season
1. Place palm hearts into a colander located in the sink and let them drain while you prepare the other ingredients. Dice avocados, put them in big bowl so you can put all the salad components, and toss with two tbsp. of fresh organic lime juice.
2. Cut the hearts of palm into small rings (or slice them in ½ if they don't cut easily.) Slice the grape tomatoes into 1/ 2. Cut the green organic onions and chop the cilantro (if you are using cilantro).
3. Toss the tomatoes, hearts of palm and green onions with the avocado and the lime juice blend, and then add extra lime juice to taste. Use the Mediterranean Sea Salt to season this yummy salad to taste and use chopped cilantro (if using) to add to the mix. You can serve this salad immediately or store it in your freezer for a few hours and then it will be ready. Enjoy this low calorie salad now!
