Slow Cooker Sweet and Savory Pot Roast

4 pounds beef rump roast -- or chuck roast
2 onions -- sliced into rings
1/4 cup brown sugar
1/2 cup apple cider vinegar
1 cup ketchup
2 cups baby carrots
2 cups beef broth
To serve: -- garlic mashed potatoes
Use a 6-qt slow cooker.
Put the roast into the slow cooker.
Add the onion slices, separated into rings. Pour in the brown sugar, vinegar, and ketchup. Toss in the carrots. Pour the beef broth evenly over the top.
Cover and cook on low for 6 to 8 hours, or until the meat has reached the desired tenderness.
If you'd like your meat even more tender, take it out an hour before dinnertime and cut it into thirds. Return the meat to the pot and turn it to high.
Serve over garlic mashed potatoes with a ladleful of juice.
