Kale Pesto - 8.7g Carbs, 1.7g Fiber

If you're a kale-aholic, this dark-green pesto will become an instant fave.

Level: Easy

4 cups kale, leaves stripped and blanched (1 bunch)
1 cup fresh basil leaves
1/2 cup extra-virgin olive oil
1/4 cup shredded Parmesan
1/4 cup walnuts
1 clove garlic, minced
1 tsp kosher salt

In the bowl of a food processor, combine kale, basil, and olive oil and pulse until combined. Add Parmesan, walnuts, garlic, and salt and blend until combined.

Store in an airtight container up to 1 week.
