1 tablespoon butter -- or margarine
1 cup bell pepper -- red or green, or combination, chopped
1 cup zucchini -- or yellow squash, or combination, chopped
1 cup eggplant -- peeled and cubed
1/2 cup chopped red onion
2 1/4 cup Spicy V-8® vegetable juice -- or bloody mary mix
1 cup bulgur wheat
1 tablespoon lemon juice
1 teaspoon zaatar -- dried, crushed
1 teaspoon Aleppo red pepper flakes
1/3 cup onions -- green, chopped
Add all the ingredients except the green onions and cook on Low for 8 hours. Garnish with green onions just before serving. May be served warm or as a salad at room temperature.
Serves 4 (as a main dish) or 8-10 as part of meza plate (starter)
ChupaNote: garnish with crumbled feta cheese, chopped Kalamata olives and capers.
