Smoky Gouda Sauced Broccoli - 14g Carbs, 2g Fiber

This irresistible side dish, made with Gouda cheese, should be served
with something simple in flavor, such as a pork roast or grilled chicken.

Bake: 15 minutes
Oven: 425 degrees F
1 1/4 lb broccoli, cut into spears
1/2 cup chopped onion (1 medium)
2 cloves garlic, minced
1 Tbsp butter
2 Tbsp all-purpose flour
1/4 tsp salt
1/8 tsp black pepper
1 1/2 cups fat-free milk
3/4 cup shredded smoked Gouda cheese (3 oz)
3/4 cup soft bread crumbs (1 slice)
2 tsp butter, melted
1. Preheat oven to 425 degrees F. Place a steamer basket in a large
saucepan. Add water to just below the bottom of the steamer
basket. Bring water to boiling. Add broccoli to steamer basket.
Cover and reduce heat. Steam 6 to 8 minutes or until just tender.
2. Meanwhile, for sauce: In a medium saucepan, cook and stir
onion and garlic in the 1 tablespoon hot butter until tender. Stir in
flour, salt, and pepper. Stir in milk. Cook and stir until thickened
and bubbly. Gradually add cheese, stirring until melted.
3. Transfer broccoli to a 1 1/2 quart au-gratin dish or 2-quart
square baking dish. Pour sauce over broccoli. Combine bread
crumbs and the 2 teaspoons melted butter; sprinkle over sauce.
Bake, uncovered, 15 minutes or until crumbs are lightly browned.
