Cucumber Canoes - 8.8g Carbs, 1.2g Fiber

Kids will love these adorable snacks! Try adding broccoli or celery sticks.

Serves: 4

2 medium cucumbers
1 cup low-fat cottage cheese
1 1/2 cups baby carrots

Slice cucumbers in half, lengthwise. Scoop the seeds out with a spoon.

Fill the cucumber canoes with cottage cheese and add the baby carrots or other vegetables.

Serves: 4
