Cucumber Radish Salad

1/2 cup plain low fat yogurt
1 clove garlic, minced
1 large cucumber, thinly sliced (about 3 cups)
1/2 cup thinly sliced red onion
1/2 cup thinly sliced radishes

In a medium bowl stir together the yogurt, 1/8 teaspoon salt, the
garlic, and a dash of black pepper. Add cucumber,
red onion, and radishes. Toss to coat. Cover and chill 4 to 24 hours,
stirring often. Stir before serving.

Makes: 4 - 1 cup servings

Nutritional Information per Serving: 43 cal., 1 g total fat (0 g sat.
fat), 2 mg chol., 102 mg sodium, 8 g carb., 1 g fiber, 2 g pro.

Exchanges: 1 vegetable.
