                        Pureed Cabbage with Cream

  1 1/2         pounds  cabbage -- green or Savoy, cored and roughly chopped
  2        Tablespoons  butter
  1         Tablespoon  minced shallots
  1                cup  cream
                        nutmeg -- a tiny grating
                        Salt and freshly ground black pepper
  1           teaspoon  fresh lemon juice
 
Bring a large pot of water to a boil, salt it, and cook the cabbage until
it is tender but not waterlogged, about 15 minutes. Drain well. Melt the
butter in a large skillet over medium heat and cook the shallots until
soft. Add the cabbage and toss to blend.
Puree the cabbage mixture with a little of the cream; return it to the
stove, add the remaining cream along with the nutmeg, and reheat gently.
Add the salt and pepper to taste, drizzle with the lemon juice, and serve.
 
Makes 4 servings
