Baked Pesto Chicken - 2g Carbs, 0g Fiber

  There are many delicious ways to prepare and cook chicken. And with just a few ingredient swaps, you can make many family favorites healthier. The next time you're planning a dinner menu, try this tasty twist on traditional baked chicken. The compliments are sure to follow.

  Servings: 4 
  
  4 pieces chicken, breast, boneless, skinless (6 oz each)
  Salt, to taste
  Peppercorns, black freshly ground, to taste
  1/2 cup pesto
  1/2 cup mozzarella cheese, part-skim, shredded (2 oz)
  
  1. Heat oven to 375 degrees F.
  
  2. Season chicken with salt and pepper. Spread 1/4 cup of the pesto in a 9" by 13" baking dish. Lay chicken breasts over pesto in an even layer and spread with remaining pesto.
  
  3. Cover baking dish with foil and bake chicken until cooked through, 20 to 25 minutes. Uncover and top with cheese. Bake until cheese is melted, 5 more minutes. Serve hot.
