My vote would be for soups you can drink from a thermos.
Container's of unsalted nuts, one for cubes proteins...low fat cubed cheese.
Cubed chicken, beef...careful these can get dry so have water handy, eggs
but remember they crumble.
There are lots of ways to make sandwiches appealing. Instead of Mayo I use
hummas....the kind with garlic. Perks up a chicken or beef sandwich. Take
cherry tomatoes to pop in your mouth with them. Try different kinds of
breads to make the same sandwich different.
Veggies.....remember there are more then carrots and celery, try turnips and
kolarobi. Any veggie that can be sliced or cut into sticks.
Fruit is a good one.....cube then into containers. Grapes are good but high
in sugar but to pick up your sugar they are great.

Hello-

I drive a truck about 9-10 hours a day, and I am Type II diabetic.
Does anyone have ideas for something quick and easy to prepare, and portable
i.e. lunchbox-type sandwiches, wraps, etc. that I can consume while driving
or making a quick stop? Wheat-bread peanut butter and sugar-free jelly
sandwiches are getting old...
