2 cups finely chopped onions
1/2 cup olive oil
1 cup sliced green onions
1 cup diced roasted almonds
1 jar capers -- (3 1/4 oz.)
1/4 cup chopped parsley
2 cloves garlic -- minced
1 tablespoon lemon juice
1/2 teaspoon tarragon -- crumbled
1/2 teaspoon basil -- crumbled
1/4 teaspoon pepper
Sauté onions in 2 Tbs. olive oil. Combine with green onions, almonds, capers, parsley, garlic, lemon juice, tarragon, basil and pepper. Stir in remaining olive oil.
Spoon into jar; cover and refrigerate up to 1 month.
To serve: use in a variety of ways. Try with cream cheese and crackers or stir into cooked pasta; spoon over hamburgers or as an accompaniment to meat; use as omelet filling or in salad dressings, tuna salad or potato salad. This condiment is low in saturated fat and very low in sodium.
Serves 48 (one tablespoon per serving)
