Egyptian Chard Stem Tahini Sauce

8 Swiss chard stalks -- thick stalks
1 garlic clove -- peeled and crushed with 1/4 teaspoon salt
3 tablespoons tahini paste -- stirred (sesame seed paste)
2 1/2 tablespoons fresh lemon juice
2 1/2 tablespoons cold water
Reserve the chard leaves for some other purpose.
Wash and peel the stalks and cut into fine dice. Steam until just tender, 5 minutes. Drain and set aside.
Place crushed garlic, tahini paste, lemin juice, and water in the work bowl of a food processor and process until the the mixture becomes a smooth creamy sauce.
Scrape into a bowl and fold in the cooked chard stalks.
Let mellow at least 1 hour in the refrigerator.
Makes 2/3 cup (10 one-tablespoon servings)
