Modern Baker Caramelized Onion and Cheese Tart

1 sheet puff pastry -- thawed
1 tablespoon olive oil -- (1 to 2)
1 red onion -- chopped
Balsamic vinegar
2 tablespoons ricotta cheese
1 tablespoon pesto
1 cup Asiago cheese -- grated
1/4 cup sun-dried tomatoes -- packed in oil, chopped
1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
2. Heat olive oil in a large skillet; add onion. Cook over low heat until just caramelized. Add a splash of balsamic vinegar. Continue to caramelize a few minutes more.
3. Meanwhile, mix the ricotta and pesto.
4. Roll out the pastry slightly. Using a 41/2-inch round cookie cutter, cut out 4 circles and place on baking sheet. Using a 31/2-inch cutter, gently score another, smaller circle on each, but don't cut all the way through. Prick the inside circle several times with a fork, going all the way through.
5. Keeping all the filling on the inside circles, place a little Asiago on the bottom; top with onions, ricotta and tomatoes. Finish with grated Asiago.
6. Bake at 400 degrees for about 15 minutes, until the outer circle of the pastry is golden brown.
