Loaded Cauliflower Salad - 19.1g Carbs,  5.6g Fiber, 6g  Sugar

All of the flavors of loaded baked potatoes with sour cream, cheese, bacon and green onions in a cauliflower 'potato' salad!
Prep Time: 10 min
Cook Time: 10 min
Total Time: 20 min
Servings: 4

1 large head cauliflower, cut into bit sized florets
4 strips bacon, cut into 1 inch pieces
1 cup sour cream
1/2 cup cheddar cheese, shredded
4 green onions, sliced
Salt and pepper, to taste

Cook the cauliflower in the microwave or steam it or roast it until tender and let it cool.

Cook the bacon, let drain on paper towels and cool before crumbling.

Mix everything and enjoy!

Option: Replace some or all of the sour cream with Greek yogurt, mayonnaise and/or ranch dressing.
Option: Add sriracha for a spicy kick!
