� 1 � � � � � � � � � � jalapeno -- seeded and finely diced
� 1 � � � � � � �bunch �cilantro -- chopped
� 28 � � � � � � ounce �canned crushed tomatoes -- 1 can
� 1 � � � � tablespoon �dried oregano
� 2 � � � � � � � � � � bay leaves
� 1 � � � � tablespoon �ground coriander
� 1 � � � � tablespoon �ground cumin
� 1 � � � � � teaspoon �cayenne pepper
� � � � � � � � � � � � Salt and pepper to taste

Heat the oil in a large saucepan. Add the garlic and saute for 1 minute
until the oil is fragrant.

Add the onion, green bell peppers, jalapeno, and cilantro and cook until
the vegetables are soft (about 8 minutes).

Add the tomatoes, dried herbs, and spices and bring to a boil. stirring
often. Lower the heat and simmer for 30 minutes. Season with salt and
pepper as desired.

MAKES 1 QUART

This piquant sauce is a wonderful base for stews and tapas-style dishes, a
pan sauce for fish, and an accompaniment for grains or beans.
