CP Chicken Soup - 12.5g Carbs, 3.8g Fiber, 4.7g Sugar

Whatever ails one - chicken soup will fix it! This is particularly true of this healthy, Paleo version with a touch of warming curry and chunky, tender vegetables.
Prep Time: 30 min
Servings: 4

2 Tbsp coconut oil melted
6 6oz boneless, skinless chicken breasts
6 celery stalks, chopped
3 carrots, diced
1 med onion, diced
1 1/2 cups cauliflower florets, chopped into bit size pieces
1 qt low sodium chicken broth
2 tsp curry powder
2 tsp salt (Omitted for Nutrition)
1 tsp freshly ground black pepper
3 cloves garlic, minced
2 tsp dried basil
1/2 tsp dried thyme
2 Tbsp parsley, chopped, for garnish

1. Put 2 Tbsp coconut oil in the slow cooker.

2. Wash the chicken and put it in the slow cooker.

3. Pour chicken broth into slow cooker. Add celery, carrots, onions, cauliflower, curry powder, salt, pepper, garlic, basil, and thyme.

4. Put lid on slow cooker and cook on low for eight hours.

5. Right before serving, garnish individual bowls with chopped parsley.
