Asiago Cayenne Crackers

1 cup white whole wheat flour
5 tablespoons unsalted butter -- melted and cooled
3 ounces finely grated Asiago cheese
2 tablespoons very cold water
1/2 teaspoon salt
1 teaspoon ground cayenne pepper

Preheat oven to 325F. Line a baking sheet with parchment paper. Set aside.

Place all ingredients in a food processor. Pulse until a thick dough
forms. Roll the dough into a long, 1-inch thick log. Slice into 1/4-inch
thick slices and arrange on the baking sheet 1/2-inch apart.

Use the tines of a fork to dimple the top of each cracker. Bake for 20
minutes or until the bottoms are golden and the crackers are firm to the
touch. Allow to cool completely before eating. Store in an airtight
container.

Serves 12
