Lemongrass Chicken - 18g Carbs, 3.3g Fiber, 5.6g Sugar

  1 lb chicken thigh fillets, sliced
  3 lemongrass white stems, finely chopped
  1/4 cup water
  2 Tbsp fish sauce
  1 tsp black pepper
  2 green onions
  1 Tbsp caster sugar
  2 long red chili
  1 Tbsp vegetable oil
  1 lb broccoli 
  
  In a wok or frying pan, heat oil on high heat. Fry chicken parts in 2 parts for 4 - 5 minutes or until brown. Reduce heat to medium, and fry a mixture of lemongrass, chili and garlic for 1minute. Add water, fish sauce, sugar, broccoli and pepper. Increase the heat to high and fry for 2 - 3 minutes, to make the broccoli tender. 
  
  Remove the dish from heat, and top with sliced green onions. Serve with rice or noodles.
