                               Green Pea Hummus

    1              pound  frozen green peas
    2        Tablespoons  tahini paste -- sesame seed paste
                          juice of 1 to 2 lemons -- fresh squeezed
    2        Tablespoons  vegetable oil
    2             cloves  garlic -- to 3 cloves, peeled
    1           teaspoon  ground cumin -- level
       1/2         bunch  fresh parsley -- washed
                          salt and pepper -- to taste
                          To serve: -- extra-virgin olive oil & a pinch of cayenne
   
  Bring the peas to a boil in a pan of water and cook for around 5 minutes,
  then drain and refresh under cold running water.
   
  Pop them in the blender along with the tahini, lemon, oil, garlic, cumin,
  and parsley. Give it all a quick whizz - it will probably be far too
  stiff, so add about 2 Tablespoons cold water to loosen it up. Season it to
  taste, and serve it in a bowl with the olive oil and cayenne
  drizzled/sprinkled on top. Yummy.
   
  Serves 6 to 8
   
  AuthorNotes: Same thing - only green. And much easier to prepare at the
  last minute. I am, of course, working on the principle that everyone keeps
  frozen peas in the their freezer. Again, this dish is best served fresh.
  Although, unlike real hummus, this actually freezes pretty well. It is, if
  anything, even more versatile - try this with crispy onions as a baked
  potato filling.
