Low Glycemic Summer Veg Smoothie - 9.1g Carbs, 2.2g Fiber, 1.1g Sugar

  Over the years, I've gotten so many requests for low-glycemic green smoothies. To be honest, they are not super appealing to me because I enjoy the fruit so much. Yet
 today I made this cross between a juice and a smoothie and it really, really hit the spot. This week the plan is to make a low-glycemic smoothie for every day so I hope I'll have many more to share with you!
  
  2 cups fresh cucumber juice (about 2-3 European cucumbers)
  1-2 tomatoes (1 tomato for nutrition) 
  1 stem mustard greens (1 cup used for nutrition)
  3-4 stems kale (3 cups used for nutrition) 
  1 Tbsp fresh lemon OR lime juice OR apple cider vinegar 
  1 cup ice 
  
  Blend until smooth. This is a bit fibrous, but it really was refreshing and just what my body seemed to need. 
  
  A FEW PRACTICAL NOTES
  * You can replace the cucumber juice with about 1 European cucumber + 1/2 cup or so extra water. I had juiced a bunch of cucumbers, so it was easy for me to use the juice, and I really enjoyed it this way. 
  * If you want to add more water or ice to suit your taste, absolutely that would be great. 
  * Vinegar and lemon/lime juice are super refreshing + alkalizing + cleansing, and the tartness really makes this drink enjoyable. I wouldn't skip it. I ran out of lemons and found the apple cider vinegar worked just fine. It also meant one less piece of equipment to clean, so there's that too!
