Tomato Halibut Stew - 24.9g Carbs, 5.1g Fiber, 16.2g Sugar

  2 lb Halibut, cubed
  2 Tbsp olive oil
  4 cloves garlic, chopped
  1 onion, sliced
  4 tomatoes, sliced
  4 carrots, diced
  4 celery stalks, diced
  4 cups tomato juice (low sodium) 
  Salt, to taste
  Pepper, to taste
  
  Heat oil and cook the garlic and onions until soft, about 5 minutes. Add the tomato juice, tomatoes, carrots and celery and bring to a boil. Reduce heat and simmer for 5 minutes. Add the fish and cook until the fish is opaque, approximately 30 minutes, and season with salt, pepper before serving.
