Vegan White Bean Pesto

15 ounces drained white beans -- (1 can)
2 cloves garlic -- sliced
1 cup packed fresh flat-leaf parsley
1/4 teaspoon salt -- or more to taste, depending on how salty the beans are
1/4 cup extra virgin olive oil
1 Tablespoon freshly squeezed lemon juice
1 teaspoon ground Aleppo red pepper
Toss all ingredients into a food processor. Process until smooth, or your
desired consistency.
Makes 1 1/2 cups
ChupaNote: thin this with a little pasta water to make a sauce. Makes a
wonderful sandwich spread, topping for steamed vegetables, soup base
(thing with broth).
You may substitute spinach, basil, mint, dill, (or a mix of greens) for
the parsley.
