1 cup tamarind pulp
4 cups water
Bring tamarind and water to a boil. Lower to a simmer and simmer for 30 minutes or so.
Pass pulp and water through a coarse mesh sieve or conical sieve. Discard fiber and seeds.
Keeps refrigerated for up to 1 month.
Makes 4 cups (16 one-quarter cup servings)
