Curried Chicken - 5.4g Carbs, 1.4g Fiber, 1.6g Sugar

1 cup chicken, cooked & chopped
1/2 cup celery, diced
1/4 cup onion, chopped
1/2 cup peanuts, chopped
1/4 cup mayonnaise
3/4 tsp curry powder
1 Tbsp lemon juice

In a medium bowl, add chicken, celery, onion, peanuts, mayonnaise, curry powder and lemon juice. Mix thoroughly.

Serve over a bed of lettuce or on your favorite bread.
